As I mentioned earlier this week, I am teaming up with Costco this week to create some great pork recipes. My chosen cuts of pork included boneless chops. They are on sale still for $2.50 off so hurry to get some. I know not everyone has a Crock Pot, but in my opinion, everyone should. Crock Pots make everyday cooking so easy. It is simply a matter of preparing the food and then sitting back while it cooks!
Raspberry Chops
Ingredients:
Boneless Pork Chops
Sweet Onions (4-5 small)
Drew’s Raspberry Dressing & Quick Marinade
Salt and Pepper to taste
Method of Preparation for Crock Pot:
Cut up sweet onions and place in bottom of Crock Pot.
Place boneless pork chops on a plate. Using a fork, poke small holes into the meat. Season with salt and pepper and layer on top of the sweet onions.
Pour Drew’s Raspberry Dressing & Quick Marinade over the chops. Make sure they are fully coated.
(I added a bit more Drew’s Marinade about half-way through the cooking time.)
Cook on low for 8 hours.
When I was at Costco, I was walking around trying to think of how I wanted to prepare this cut of meat. Grilling and broiling are the two recommended methods for boneless chops but I knew that a Crock Pot was going to be my source. I love cooking that way. I walked around and was able to put an entire meal together while walking through the store. We bought the boneless chops, the Drew’s Raspberry Dressing, Garlic Bread, and sour cream at Costco. I served my chops with the delicious Garlic Bread from Costco (this is a regular buy for us) and hashbrown casserole.
To serve this, I simply used a big spoon and scooped out some yummy sweet onions, sauce and the chop. What did we think of my recipe? Oh my goodness. It was so good. This is a definite must-make again meal for us. It was so easy, so affordable, and so good!
