There is nothing more satisfying than biting into a delicious cupcake. I love a piece of cake but cupcakes are so fun, for adults and kids. Today I am bringing you a new spin on cupcakes with a cherry vanilla coke cupcake. These delicious flavors combined make this a treat you will be making again and again. You can dress these up with cute cupcake wraps. I use the Wilton covered cupcake set, that has 3 different sizes of pan to cook in and a lid to carry them all with you to a special event! Ingredients
2 1/2 C flour
1 1/4 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
1 3/4 C sugar
10 tbs unsalted sweet cream butter, melted
1/2 c milk
3 tbs oil
1 tsp vanilla extract
1/2 c cherry Coke Cola
6 large egg whites

Frosting
1 C sweet cream butter softened
3 tbs heavy cream
2 cups powder sugar, plus 2 more on standby
1 tbs vanilla
Instructions
Preheat oven to 350F
In a large mixing bowl whisk together flour, powder, soda, salt, and 1 1/2 cups sugar.
Mix together the melted butter, milk, oil, vanilla, coke, and 3 of the egg whites.
Add into the dry ingredients and mix until combined.
Beat remaining egg whites using a whisk attachment until foamy, add in remaining sugar. beat until stiff peaks form
Gently fold in 1/2 of the meringue into the batter just until well combined.
Divide batter evenly into cups
Bake at 350F for 18-20 minutes,
Cool cupcakes in pans on wire rack for 20 minutes before taking out of pan.

Frosting:
Cream butter and sugar together.
Add heavy cream if butter and sugar look like little rocks
Add vanilla and blend until well mixed and peaks form.
If not thick enough add powder sugar.
If too thick add more heavy cream.
Pipe onto cooled cupcake and place cherry on top
