Chocolate Avocado Cupcakes with Avocado Buttercream Frosting

One of the only holidays we don’t celebrate in my house is St. Patrick’s Day. It isn’t for any real reason, other than we aren’t Irish. I decided to do something about that this year though and started with this recipe. It does call for a boxed cake mix, but you can make your own if you wish. I love using boxed mixes because they save time, are affordable, and are delicious. The surprise ingredient in these cupcakes though is the avocado! These are sure to be a hit and your family won’t even know that there is avocado in them!

Chocolate Avocado Cupcakes with Avocado Buttercream Frosting. This uses a boxed cake mix and avocado for the cake and a special avocado-based frosting that is sure to please! http://tobethode.com

Chocolate Avocado Cupcakes with Avocado Buttercream Frosting

Ingredients

Boxed chocolate cake mix and the ingredients it calls for minus oil

⅓ Cup Ripe avocado, mashed (to replace the ⅓ C. oil)

5 Cups powdered sugar

1 Stick of butter, softened

1 Ripe avocado, mashed

3 Tablespoons milk

Instructions

For cake, follow directions on box, omitting oil and replacing equal amount of mashed avocado.

Reduce baking time by 5 minutes. Cupcakes are done when a toothpick inserted in center comes out clean.

For icing, use a stand or electric mixer, combining butter and avocado until combined and smooth.

Slowly add powdered sugar.

Add milk to the consistency you desire.
