I have blogged before about how much I love e-mealz. Something I really have enjoyed about this service is that it is making me and my family try new things. It may not seem like much to some people, but we have eaten a lot of the same things for years. Just in the past month, I have introduced fresh spinach and black eyed peas to our diet. All I have to say is YUM YUM YUM!!!
This is a dish that I recently made that didn’t really sound so great on paper but was so, so good when it was done.
Beefy Hoppin’ John
Ingredients:
1 lb ground beef
1 c chopped celery
1/2 c chopped onion
(1 T bottled minced garlic, 1/4 t red pepper flakes,
3/4 c uncooked long-grain rice)
2 cans beef broth
1 can black-eyed peas, rinsed
Method of preparation:
In large skillet, cook beef; drain. Add celery, onion, and garlic. Cook 5 min.
Add red pepper and broth. Bring to a boil.
Add rice. Cover; simmer 20 min.
Add black-eyed peas and cook 10 more min or until liquid is absorbed.
This was so good and it made me use some ingredients that I don’t normally use (celery and black-eyed peas). My entire family loved it and asked that I make it again. I am 100% happy with e-mealz and have a few friends that are as well. Let me know if you have tried it. I would love to know what you think!
