Easy Beef Enchiladas

Tonight’s meal was so easy but so good. I used flour tortillas because that is what we had available but a more authentic flavor would be gained by using corn tortillas. If you aren’t a fan of bell pepper (I used green), you can easily exclude them and this will still be delicious! All three of my kids ate this up with no complaints!

Easy Beef Enchiladas

Ingredients
  • 1lb ground beef
  • 1 onion
  • ¼ chopped bell pepper
  • 2 cloves minced garlic
  • ½ pack taco seasoning
  • cheese of your liking
  • water, oil
  • tortillas (corn or flour)
  • 1 can enchilada sauce
Instructions
  1. Preheat over to 350 degrees.
  2. In a large skillet, add small amount of oil (I use EVOO). Add ground beef.
  3. Once beef starts to brown, add chopped onion, minced garlic, and chopped bell pepper.
  4. Drain off grease. Veggies will be softened. Add taco seasoning and small amount of water. Let this come to boil and then reduce.
  5. When preparing the enchiladas, pour small amount of enchilada sauce into the bottom of a 9x13 pan (sprayed with nonstick cooking spray).
  6. Add a spoonful of your meat mixture in the middle of the tortilla. Add a small amount of cheese and a line of enchilada sauce on top of the cheese.
  7. Roll in both sides of the tortilla and roll up. Place folded edge down into the enchilada sauce.
  8. Continue until your pan is full. (I got 7)
  9. Pour remaining enchilada sauce on top of rolled tortillas.
  10. Cover with foil and bake for 30 minutes at 350 degrees.
  11. After 30 minutes, remove foil and add cheese to top of enchiladas. Cook for 10 more minutes or until cheese bubbles.

      Just enough to make the taco seasoning be blended. You want it like a taco consistency. You should be able to look on the taco seasoning packet for their recommendation. I just eyeball it!

    I think it would be helpful (for those of us who have never made enchiladas before) if you stated how much water to use. Also what size can of enchilada sauce.

    I tried out this recipe last night and my husband and I really enjoyed it! It was very simple! My only complaint was that the tortillas were a little bit soggy after coming out of the oven. I used flour tortillas because I couldn’t find corn. Any advice?

    I tried this recipe last night…they are so delicious! Great recipe and very easy to make! The only complaint that I have is that the flour tortillas that I got were soggy. I wonder which brand of flour tortillas you used or if you could fry them before wrapping them up and would that make them less soggy? I couldn’t find corn tortillas at the grocery store I shop at.

      If the tortillas are too soggy,you can lightly crisp them by putting a little olive oil in a pan and lay the tortilla in there for a couple of min on each side and then proceed with the instructions. This gives them a nice crunch.

      Also if you’re anything like me and don’t have a lot of time to cook after getting home from work…I put 2 frozen chicken breasts in a crock pot with chopped onions, bell pepper, 1 can of diced tomatoes, taco seasoning, and just enough water or chicken broth to cover everything on low for 8hrs or so…shred the chicken with a fork when you get home and add to the tortillas and place in the oven. So delicious and easy!

    Can you believe I’ve never had beef enchiladas? I always make chicken enchiladas with a white cream sauce. I’ll have to try your recipe sometime. Thanks for sharing Stefany!
