Easy Beef Enchiladas

- 1lb ground beef
- 1 onion
- ¼ chopped bell pepper
- 2 cloves minced garlic
- ½ pack taco seasoning
- cheese of your liking
- water, oil
- tortillas (corn or flour)
- 1 can enchilada sauce
- Preheat over to 350 degrees.
- In a large skillet, add small amount of oil (I use EVOO). Add ground beef.
- Once beef starts to brown, add chopped onion, minced garlic, and chopped bell pepper.
- Drain off grease. Veggies will be softened. Add taco seasoning and small amount of water. Let this come to boil and then reduce.
- When preparing the enchiladas, pour small amount of enchilada sauce into the bottom of a 9x13 pan (sprayed with nonstick cooking spray).
- Add a spoonful of your meat mixture in the middle of the tortilla. Add a small amount of cheese and a line of enchilada sauce on top of the cheese.
- Roll in both sides of the tortilla and roll up. Place folded edge down into the enchilada sauce.
- Continue until your pan is full. (I got 7)
- Pour remaining enchilada sauce on top of rolled tortillas.
- Cover with foil and bake for 30 minutes at 350 degrees.
- After 30 minutes, remove foil and add cheese to top of enchiladas. Cook for 10 more minutes or until cheese bubbles.
