My good friend and contributor, Laura, sent this recipe to me and I had to share. I have never had rice pudding *gasp* but it sure sounds good. I especially love how easy this one is! Laura promises that this one won’t disappoint, so give it a try!
Pumpkin Pie Rice Pudding
Ingredients
- 1½ c dry white rice
- 3c water
- 1 12oz can evaporated milk
- 1 c milk
- 1 c pure pumpkin
- 1 tsp vanilla
- ½ to 1 cup brown sugar
- 2 tsp pumpkin pie spice
- cinnamon for garnish
Instructions
- Bring water to boil add rice and simmer covered until liquid is gone.
- Add all ingredients except cinnamon and simmer on low until thickened
- Sprinkle with cinnamon to garnish

Sound yummy!
