Pumpkin Pie Rice Pudding

My good friend and contributor, Laura, sent this recipe to me and I had to share. I have never had rice pudding *gasp* but it sure sounds good. I especially love how easy this one is! Laura promises that this one won’t disappoint, so give it a try!

Pumpkin Pie Rice Pudding
 
Ingredients
  • 1½ c dry white rice
  • 3c water
  • 1 12oz can evaporated milk
  • 1 c milk
  • 1 c pure pumpkin
  • 1 tsp vanilla
  • ½ to 1 cup brown sugar
  • 2 tsp pumpkin pie spice
  • cinnamon for garnish
Instructions
  1. Bring water to boil add rice and simmer covered until liquid is gone.
  2. Add all ingredients except cinnamon and simmer on low until thickened
  3. Sprinkle with cinnamon to garnish
